Another point: so the reason this works is that refraction angles change based off of how dense something is – so you could measure the angle of refreaction and correlate that to density. The reason ultrasound is used is because if you get diffreaction, like 2 slit type of deal, then you distances will be all messed up, so you need something with a small wavelength.
